CHICAGO - CuisineWire -- After months of preparation, Louisiana Native and Chef, Robert Brasseaux, has opened Brasseaux's Cajun Kitchen in Chicago's South Loop.
The new to-go only restaurant, located at 2537 S Wabash in Chicago, features Southern Louisianan staples such as gumbo, jambalaya and étouffée.
Chef Brasseaux brings more than 25 years of experience in hospitality to this new role. Prior to launching his own restaurant, Brasseaux held positions at A La Carte Entertainment, Sugar Factory, High Noon Saloon and Bonchon Chicago which not only taught him about managing a restaurant but also reinvigorated his love for cooking.
"Working in the industry, I noticed that there was a lack of real Cajun restaurants and thought that I could help fill that void, "says Brasseaux.

Brasseaux's knowledge of Cajun food came from visiting his Uncle Rose as a child. His Uncle was a chef who often included him in the process of making traditional Cajun dishes like gumbo and étouffée.
"I hope that Chicago will be as passionate as I am about authentic Cajun cuisine as I am and that I can open a sit-down location come summer 2021", he says.
